    You could technically mix the coconut milk in with a second vegan milk and just pay attention to fat amounts. I have a grumpy gallbladder (and both myself and the doctors – unusual for drs to take this stance – do NOT want to remove it) so I really have to watch my fat intakes. Under normal circumstances I can get away with SOME fats BUT right now I can barely eat anything (surgery = one really angry gallbladder *eyeroll*) so I’ll be saving the coconut one for later.
    I’m not vegan – again, health insists I do intake some non-vegan sources – but I believe it’s incredibly healthy (not to mention less expensive) to add in vegan meals to a person’s diet and am ALWAYS looking for more. Thanks for this!

    Thank you very much for making these videos. Growing up the only foods in my home were frozen in a mix or microwaved. I feel more inspired to cook now being only 20 years old. Cooking vegan dishes feels so much easier than cooking with meat. Unfortunately my parents are intolerant of my veganism, but thats not stopping me.

    just dipping my toe into vegan recipes. wouldn’t the aquafaba be an egg substitute for the Avgolemono or does it have to be whipped for that?

    I made the second thing with the coconut milk and turmeric. I added small cubed potatoes and carrots with spinach. Added some lemongrass and cinnamon , sesame oil a drizzle. Very easy to make. The yogurts added very good taste. This really livened up my boring diet. Thanky

    These all look lovely! I’ve got some greek girl advice about the avgolemono soup: you can make it thicker if you add a bit of corn flour, you don’t need Just Egg. Add a spoonful in a cup of !cold! water, make a slurry and add it to your soup (more or less depending on the amount of soup you’re making) 💗 Another avgolemono soup you might love is vegan Mageiritsa (it’s a soup they make in Easter, not vegan by default, but many people make it with oyster mushrooms instead of meat. Lettuce, dill, spring onions, it’s yummy). I’m super inspired now, thank you 😀

    Actually i always keep in my freezer fresh herbs. You can freeze them whole or chop them up, put them in zip lock or whatever container you want ❤
