Why do no videos about cast iron cooking ever address the giant smoky elephant in the room? Every time I use my cast iron skillet, no matter what heat, oil or temp it looks like my goddamn house is on fire.

Canola oil is a literal poison
This video misses important things and will lead to frustration:
1. Steel wool will strip off the seasoning built up over time. This reset should only be done if the pan is rusted or there’s food burnt in. Otherwise just just a little soap and water to get it clean before oiling.
2. As someone previously mentioned, the pan goes in oven face down
3. IMPORTANT: 15 minutes into baking, take the pan out and wipe up excess oil buildup or else it will come out uneven with shiny blotches
4. If the pan doesn’t come out nice and evenly glossy, add a new layer of oil and repeat the baking process. This will need to be done 3-5 times if you did a full reset of the seasoning
Yes taking care of a cast iron is a lot of work but worth it
The more you give the more they take.
You can move&flip meat all u want, doesn’t affect the crust. It’s been debunked by Guga and I’ve tried it myself. It’s actually bettet to flip it multiple times to ensure you don’t overcook it.
The crust won’t be better just because you leave it on. What you should be concerned with is to ensure good contact with the pan to get a good crust wether you flip or not.
I’m a professional chef and I’ve experimented with the typical myths ex that black pepper burns… it does not.
I would divorce my wife if she cleaned Iron with soap

I just inherited my Great Grandma’s cast iron. I don’t know if she bought it or if she inherited from someone else. It’s at least 100 years old and still looks like it could be brand new. Cast iron takes some work, but if you treat it right, it can become a family heirloom.
one thing about seasoning the whole thing, that’s bs coming from a commercial kitchen perspective. you absolutely don’t need to grease up the entire pan. you just need to season where food is touching. let’s be real nobody has got time for that (especially if it’s your job) just clean it with dish soap that doesn’t have any lye in it and you’re good to go. if you can serve people meals that they pay money for you can do it in your kitchen. there’s not a general consensus on how cast irons should be handled but what people that do cooking for a living generally know what works for it. the way my sous chef taught me is that you cook your food and when it gets too many burnt bits just wipe it with a paper towel, add more oil and keep going.

might aswell buy non-tefal nonstick pan and not waste your time because this pan needs tons of oil to cook properly,so whats the point if you wanna be healthy just buy those rock pans that dont need any maintenance. There are hundreds of non-toxic nonstick pans i use granite,why would i buy cast iron if i dont use oil at all? oil is the main toxin,the way you season makes that oil carcinogenic and you then eat from that pan,anyone knows burning oil is toxic and here it says to burn flaxseed oil so it would ABSORB into a pan,so you are creating tefal pan basically?

Great video! Question, Whenever I use a clean towel or paper towel to dry my pan or wipe off the excess oil, it always leaves fibers from the towel or paper towel. It drives me insane! Do you use a special kind of towel?
I used olive oil and my results were great. Baked it at 450 for two cycles. And it’s beautiful. I love cast iron. The original non stick pan.
I use the rust as seasoning, adds a lot more flavor

Hot water and a rough sponge,dry with a towel,depending on the size of the pan medium to small sized puddle of olive oil and use a paper towel to coat the pan,set the oven to 425 and let it sit for a hr upside down

All you need is just some oil, a good towel and a f#@ing oven
I would avoid flax seed oil, canola (rapeseed) oil or other seed oils on your cast iron (or in your diet, generally speaking). Bacon grease, butter, olive oil or coconut oil are all superior to seed oils for human consumption.
Is it possible to season a skillet if you don’t have a working oven or in a toaster oven?

Well I tried all these seasoning tips on 4 well seasoned pans but the egg test always sticks,, really sticks all over the pans, not sure what part I am getting wrong, they are medium rough surface cast iron pans and well seasoned. Looking at going back to teflon to be honest,, The electricity used in seasoning and all those paper towels are an environmental disaster if we all do this. season in oven for hours, Pre-heat, rinse in hot water, wipe with paper towels, re-heat each time. Terribly energy intensive. Love your vid but no offence intended just find these pans a false economy.
