Texas Smoked Brisket is simple but classic! 🍖💨🔥
Having done a couple brisket recipes, I decided to make the holy grail of barbecue: Texas Smoked Brisket. Simple salt, pepper and garlic powder (optional of course) seasoning on this packer brisket. i smoke on 225 until 200-205 internal, wrap in butcher paper with beef tallow and put in cooler until 140-145 internal

I Do all this exactly. Exept when I rest my brisket, I rest it in a warmer oven still wrapped at 150° for about 6 to 8 hours. And man, is it juicy and tender. Off the charts! Oh, I forgot, I inject my brisket with liquefied wagu tallow. Then put in refrigerator overnight to brine. I do keep my tallow and smoke it in a separate pan with the brisket. That’s.the tallow I pour on my brisket when I wrap it. Love your videos. Keep em coming.
What made you smoke this brisket at 225 versus 250 or 275

Try cooking at 250 you get a better bark

To make this brisket better let it rapidly cool to an internal temp of about 180 degrees and then stick it in your oven at 170 degrees for 8 hours. Finally, pull it out ane let it rest for 2 hours. Thank me later! I know… it takes alot longer but trust me when I say it’s WORTH IT!!

My biggest mistake is watching these videos before I go to bed….going to bed hungry isn’t fun.
When you take it off to rest, do you put it straight in the cooler or let it cool down to a certain temp?
