What a pain…I throw my Kitchen Buck knives in the dishwasher and use a Buck sharpening tool to keep ’em fresh…simple.
Agree with most of this. But for the love of all things sacred, stop using bamboo. It is litterally one of the worst things you can use as a cutting surface for your knives
Bamboo is terrible for knives, it has a super high silica content so its like having grains of sand embedded in soft wood. Nobody who knows anything will recommend bamboo lol

Frank. you are the best. I have been a butcher for 45 years. Your knowledge on this is great. I have not seen a better teacher on this subject. I really like the part about the sudsy water . I remember many times i foiund a knife at the bottom of sink. Very dangerous i shudder just thinking about what could happen when you reach in. Even today i go in very carefully and search for a knife. Thanks very much. One note on the stone. My teacher told me to make sure to keep it clean , he used a cleaning poweder like comet. I really doubt a dishwasher gets hot enough to ruin a knifes temper
How about just sharpening the knife after every use a little instead of the 20 minutes a month that’s what I do best way to keep your nice shirt. I’m not the kind of guy that schedules 20 minutes a month to do my knives. It’s never gone wrong for me to sharpen before you use every time a little And I mean a little works the best for me

Make sure you test the sharpness of your knife the correct way! Follow exactly as he did: run your finger NOT ALONG THE LENGTH, but across the edge. Do it the wrong way and you’ll hurt yourself!

Unless there an experiment showing how raising the temp of a blade to 200F decreases it’s hardness, I don’t believe it.

You can sharpen a knife using another knife.
My mother in law NEVER sharpened her knives, she says it ruins them. I went to make a veggie tray at her house, and it was horrible, like i was using a butter knife. I almost cut myself several times. I was shocked an older, experienced cook would keep dull knives.

Best way to sharpen a knife is 400 grid diamond stone and a leather strop with 6 micron diamond stropping paste

What I want to know is the ANGLE in degrees that knives should be held at when using the whetstone.

How can I shine my knife up the blade and then wooden handle
I use a manual sharpener all the time on my knives and after doing so, I wipe my knives with a damp cloth…it works for me anyways…
