Here’s a simple way how to make bacon that’s crisp and tender instead of dry and crumbly. Make crispy bacon with no risk of overcooking. Bacon cooked in water? It works!
Place the bacon (in strips or cut into pieces) and just enough water to cover it in a skillet over high heat. When the water reaches a boil, lower the heat to medium. Once all of the water has simmered away, turn down the heat to medium-low and continue cooking until the bacon is crisp and well browned. When we tried this method, the meat plumped up as it cooked instead of shriveling, leaving the bacon pleasantly crisp yet moist, not tough or brittle.
The addition of water keeps the initial cooking temperature low and gentle, so the meat retains its moisture and stays tender. By the time the water reaches its boiling point (212 degrees), the bacon fat is almost completely rendered, so you’re also much less likely to burn the meat while waiting for the fat to cook off.

So all the years I’ve learned that water boils at 100degrees Celsius now it’s the first time ever that I hear one’s the water boils at 220 degrees

I dont know why people use skillets to cook bacon..i used to do that. The easiest and fastest way is just to use a large square pan line it with aluminum foil and cook the bacon at 375 for 20mins in the oven…Comes out perfect everytime. No mess bc the oil is contained in the aluminum foil, no clean up bc its all done inside the oven.
Stove top spatter and clean up is a deal breaker for me.

Modified:
1. Lay bacon in a cold skillet.
2. Add a bit of water.
3. Cook on medium heat until you wish to speed up, then remove remaining water.
4. Continue cooking until bacon crisps in its own remaining fat.
5. Optionally, drain excess fat on paper towels.
6. Enjoy!
Will try it. I use pork belly and usually lose so much of it because it turns into oil
The one tip I’d add is it depends on the amount of water in your bacon. I know some snob in the comment section is gonna complain that’s the issue with “store bought bacon”, but that’s ridiculous. Almost no one uses farm fresh bacon.
